From the Gonzo chef. Made Habanero apple sauce from the apples in front of my house, and then a batch of chipotle apple sauce. I take a cleaver and cut out the core, leave the skin, drop it in a pot. fill it up with apples, then add a 1/2 quart of cider (more if the pot is big) let it boil. Mash it up with a potato masher. Add Grade B maple syrup for sweetener. Sprinkle in cinnamon and nutmeg. Add some nuts or raisins if you have any. Or blue berries. I also add a handful of zingers--red dry candy that is laced with hot, zingy cinnamon. Boil and mash. Let cool a bit. Taste and add more habanero or chipotle (they are smoked jalapeños or New Mexico Peppers, something they do on the roadside in New Mexico during the season). If it is too hot (yes, it sneaks up on you), just add more apple sauce that has not been laced with peppers. The habanero apple sauce I use on cold cereal. Wakes you up. Chipotle apple sauce is great on pork. If you have an experimental bend, swirl it in with mashed potatoes. For extra flavor pour in the maple syrup first and heat it up so it is a bit chewy and very sweet. Then add everything else and wait with the potatoe masher in hand.
