..........................GREEN TOMATO CHOW-CHOW............................. 4 quarts or 24 large green tomatoes, sliced 1/2 cup sea salt 1 pound onion, finely chopped 1 extra large head of cabbage, cored & shredded 1pound red bell pepper, seeded & finely chopped 1-2 red hot pepper, seeded & finely chopped 1c firmly packed brown sugar 2Tbsp. Mustard seed plus 2 tsp. dry mustard powder 1Tbsp. Celery seeds 1 Tbsp. groung allspice 1Tbsp. whhole cloves 3 pints vinegar Combine tomatoes and salt In large glass or stainless still bowl, cover and let set overnight . Drain, rinse and drain in two cold water Baths. Soak tomatoes in fresh cold water 30-35 minutes ,drain. Grind tomatoes into a large stainless still stock pot, add remaining ingredients and cook uncovered over medium-high heat for 1 hour, stirring occasionally to prevent sticking. Quickly ladle into 1/2- 1 pint size hot sterilized jars. 1/2 airspace. Remove air bubbles . wipe rims & place lids and rings on jars. Process in boiling water bath for 15-17 minutes. Remove from hot water carefully, place on cooling rack to cool completely about 24- 36 hours before moving too a cool dry place. Enjoy.
