Garlic is an ingredient which is loved by some and hated by most. I love this ingredient and if used properly, it can take a dish to another level. Here I have used it predominantly with Chicken - A simple no fuss recipe but absolutely delicious. My version of Lehsuni Murg Recipe Ingredients Chicken 800gm (Broiler) Garlic 1 pod full Salt to taste Onions 4no. Cloves 3-4 Cumin seeds 1tsp Green chilies 4no. (Or as per desired spice levels) Coriander pdr 2tsp Cumin pdr 1tsp Chicken masala pdr 1 and half tsp Garlic cloves 8-10 Oil as required Method: Take one pod of garlic, peel and liquidise with half a cup of water. Make gashes on chicken pieces, marinate with the liquidised garlic and salt for an hour or so. Take garlic cloves, slice into slivers and deep fry till light golden brown. Keep aside for garnish. Chop onions into chunks - boil one and a half cup water with cloves - add onions and cook on medium heat till the water evaporates and onions are transparent and cooked. Blend into paste and keep aside. Heat some oil (same that was used for frying garlic slivers) - add Cumin seeds and let it crackle. Add marinated chicken and bhunno on high heat for 3-4 minutes. Keep aside. Heat oil in another pan - add crushed green chilies and stir for a minute. Add boiled onion paste and stir for a couple of minutes. Now add dry spices and mix well. Stir for a minute - now add the chicken (make sure everything along with scrapings go with the chicken) - bhunno this till chicken is completely cooked. Sprinkle some water in between if required. Adjust seasoning and garnish with fried slivers of garlic. Serve hot.
