Good Lentils Pot: One large onion, chopped. Five stalks celery, including the leaves, chopped. One bunch curly kale, stemmed and chopped into bite-sized pieces. A tablespoon or more minced garlic (I cheated; came from a jar). Three cups brown lentils, rinsed well. Something like eight to ten cups water. Two or three vegan, salt-free boullion cubes. Heaping tablespoon, dried New Mexico green chili powder. Salt to taste. Half cup good balsamic vinegar. Put veggies, water, spices and boullion cubes in pot, bring to boil. Boil five minutes, stir down veggies then add the lentils, stirring well. Return to boil, then reduce heat to low and cook about 35 minutes checking water level occasionally in case you need to add. When lentils are the desired tenderness (but not mushed to smithereens), add the balsamic vinegar and stir. This is a thick stew/soup. Could add minced carrots to the veggies. I meant to, but forgot. It tastes good and will taste even better tomorrow.
