To find the best chocolate, look at two other criteria before even thinking about the percentage of cacao mass: The first criteria is type of chocolate bean. The second criteria is country of origin. A real chocolate expert smells first, and tastes later: Break the piece of pure chocolate in two parts and rub the parts against each other.
