Gordan Ramsays 4 Minute Mousse That You Absolutely Must Try... (I promise you that is the actual name of the recipe... okay maybe not... but it should be) 100g dark chocolate (I used the Whittakers 62% Dark Ghana) 300ml thickened cream 1 large egg white 50grms caster sugar Chocolate flakes to garnish to make it all pretty like :) Step One Break up the chocolate into small bits and pieces and put to the side. Heat half of the cream in a lil pot until it begins to boil. Once it has begun to bubble away turn off the heat, and add the chocolate bits. Keep on stirin until the chocolate has melted completely and its all smooth and shiny. Step Two Set up a bowl over another bowl of ice water... my lack of bowls meant I had to use my kitchen sink filled with water and ice cubes... still worked a treat... Pour the chocolate mixture in to the bowl that is sitting in the iced water and add in the rest of the cream. Now you just need to stand there and beat it with an electric mixer for about 4 minutes (aaahhh maybe thats why he calls it the four minute mousse...? Not sure...) You want the chocolate mix to be forming soft peaks... just keep on beating till you get to that point. Step Three In another bowl, beat the egg white with an electric mixer until stiff peaks form. Add the sugar just a little at a time and continue to beat until you get to that meringue mix stage. Step Four Fold (and this is important)...fold the meringue mix through the chocolate mix until it is all combined. Step Five Now you are ready to spoon in to chilled glasses, or straight on to a cake if you are using it for that... Sprinkle over a little bit of chocolate flakes and boom... masterpiece... yum! Step Six You can pop it in the fridge to chill and set a little harder or you can actually serve straight away... Step Seven EAT IT... ALL... Hope you enjoy!!
