Grandma Riley’s Sweet Tea As a kid when I would stay over at Grandma and Grandpa’s the first place I would hit would be the fridge to see if there was any Sweet Tea. She made the best Sweet Tea. If there wasn’t any made she would always say I know what you’re looking for. I would watch and watch her but never got it down. Over the years I experimented with several versions and I think I got it pretty close. Close enough so that when I drink it I think of her in kitchen making it. Sometimes we would go outside and pick the fresh mint she had growing and add that to it. I loved it that way. I love you Grandma, from heaven I know you still watch over every one of us. No Iced Tea maker allowed.. On the stove put in 5 regular size Tea Bags I use Lipton in a pot with about 3 cups water (I keep a pot just for Tea nothing else is cooked in it. This avoids anything but pure tea flavor) Bring that to boil slowly. Once it boiling remove from the heat and let it set for about 20 minutes. The Tea still has to be warm to melt all the sugar. Cut in half one fresh whole Lemon Add 2 ½ cups sugar to a gallon pitcher Glass one if you got it. I hate plastic Tea pitchers. Next squeeze the lemon both halves into the sugar. Squeeze through your fingers to catch the seeds. Add the hot tea from the pot and let it set on the sugar and lemon about a minute then start to stir it until the sugar completely dissolves. Next add Cold water to fill the pitcher the rest of the way. If you are going to add fresh mint do it before adding the water so the heat will release the oil of the mint leaves, also place them in palm of your hands and gently rub them until you see some dark green forming, this is also to help get the oil flowing. Serve over Ice. Enjoy.
