Great time was had at the Island Market yesterday as people were trying out seasonal chilled soups and guessing the ingredients. People also voted for the one they liked the best. Here are the results:- 4th Courgette and Parsley (3pts) 3rd Vichyssoise (10pts) 2nd Chilled Broccoli (12pts) 1st Fresh Pea and Mint (16pts) Here is the winning recipe:- 2 tbsp. of butter 2 leeks (chopped) 1 onion (chopped) 1 litre vegetable stock (or chicken if you prefer) 500g of peas Handful of fresh mint leaves 2 tbsp. of crème fraiche Fresh chopped chives Salt and pepper to taste Melt the butter in a large saucepan and add the onion and leeks. Cook over a low heat until the onion is soft Add the stock and bring to the boil Add the peas and cook for 3-5 mins (3 mins if peas are frozen) Take off the heat and add salt and pepper to taste Blend soup Whisk in the crème fraiche and chives Can be served hot or cold All recipes will be on the website very soon
