Green leafy vegetables are nutritional powerhouses that people should be eating regularly, according to a new study. Watercress, Chinese cabbage, beet greens and spinach are among the top 10 when it comes to nutrient density, and contain lots of B vitamins, vitamin, iron, and folate. Eat them raw or cook them, lightly to preserve nutrients – boiling may result in a loss of vitamins and minerals. If you do boil these veggies, be sure to save and use the water for sauces or soups.
