Growing up after the Great Depression we learned early that NOTHING was wasted. If there was an extra baked potato, it was fried the next day. Mama called them Taters With the Jackets. I stopped eating commercial French Fries almost 50 years ago when I learned what they were fried in and how many times that fat was heated and reheated. I use large Idaho Russets, I bake them an hour at 375 and refrigerate them Taters With the Jackets. LOVE THEM SKINS!!! I use Canola oil, use it once and discard it. I prefer not to keep reheating fats. As is the case each time, I fry them in Grandmas old Griswold #8. How can something so simple taste so good and be so memorable? ;-)
