HACIENDA LUZ DE LUNA History & concept Hacienda Luz de Luna is an architectural gem, a place with its own magic that transports us to the epoch of the coffee plantations of the last century. Located in the heart of Puerto Rico, it has 125 years of history. It has been the Vivoni’s family residence since 1976. In 2002 they established a handcrafted citrus syrup candy factory. In 2009 they started the concept of “Vida Ventura Restaurarte” and since November 2012 sell 100% Arabic coffee grown on their farm. By advance reservation, groups are able to visit the facilities, most weekends and by special agreement on weekdays. Attendees are greeted with a welcome cocktail made with local fruit nectars, followed by tapas. After providing some information on the property, Mr. Edric Vivoni, leads an on foot journey though a cement sidewalk of the close by surroundings. You will enjoy approximately half an hour of agricultural, botanical and cultural information. It concludes on the terrace where the food tasting starts. Mrs. Luchy Vivoni will be the hostess. Chef Ventura, youngest son of the Vivoni couple, deals with the preparation of eight delicious and varied dishes inspired by the flavors of our land. These vary weekly. The chef interacts with the guests explaining each of the dishes as they are served, adding a special treat to the experience. Once reservations are made, the menu will be forwarded previous to arrival date so adjustments can be made in case of vegetarians or allergies. During the two hours and a half of the dining experience, time passes slowly, providing an area of peace in which the dinner invitees feel well cared for and at home. A typical menu usually consists of: 1. Soup: Interactive, a combination of elements ending broth mixing when added at the table. 2. Appetizer: a salad, or refreshing element, top, beginning or a prelude to the main course. 3. First Main Course: The use of fresh fish is often found in recipes, like some mergers with seafood or light character such as mushrooms and vegetables as vegetarian options 4. Intermediate: Fresh fruit sorbet with accents astringent to separate flavors on the palate. 5. Second Main Course: Choice of meat like lamb, cuts of meat, duck, pork, prepared with great dedication trying to extract various assertive textures and flavor combinations. 6. Pre-Dessert: Refreshing sorbet or combined with a delicate sip liquor, to kick off the sweet part. 7. Saucer: Course of artisanal cheeses and jams made at Hacienda Luz de Luna. 8. Dessert: Combination of textures and flavors, using local products and always looking for a way to create their own signature dishes with different elements that distinguish it in a very light and transcendent. There is a limited choice of wines to accompany the tasting and guests are allowed to bring on their preference. (Other types of liquor are not sold.) After a “pocillo” (small cup) of coffee picked at the plantation, attendants pass to the old part of the Casa Grande and Mr. Edric Vivoni provides a chronicle of its existence. The historical journey includes six hundred years, beginning with the discovery of the island, the three families that have resided in hacienda Luz de Luna and a bit about the future of Puerto Rico. This requires an additional half hour. To fully enjoy your visit, you will need around four hours. Visitors will leave with more information on trees and agriculture, an excellent and creative dining experience and data on the unwritten history of Puerto Rico and its future.
