HAPPY NEW YEAR everyone! We kicked it off by baking Amelia Bedilias chocolate sheet cake. My daughter has been on my case to bake this cake. The recipe is included at the back of one of her Amelia Bedilia books. We made it a fun activity today, and let me tell you, this cake is super moist and super easy to make. A great recipe to have any time you need to make a chocolate cake. A couple of great things about this recipe - all the ingredients are added into the baking pan directly and mixed. So no extra pots and pans to clean. - because this recipe has no eggs, the kids got to lick the batter as much as they liked. Amelia Bedelias Sheet Cake 3 cups of flour 1 3/4 cups of sugar 2 tsp baking soda 1 tsp salt 2/3 cup of cocoa 3/4 cup vegetable oil 2 tablespoons vinegar 1 tsp vanilla 2 cups water Sift the flour, sugar, baking soda, salt, and cocoa directly into an ungreased 9 by 13 pan. Add oil, vinegar, and vanilla. Pour water over all ingredients. Mix with a fork until smooth.. Bake at 350 degrees for 25 to 30 minutes. We used a simple homemade buttercream frosting to frost the cake. Butter Cream Frosting 1 stick butter (1/4 cup) 2 1/2 cups confectioners sugar 2 tbs whipping cream pinch of salt Just beat all the ingredients together until fluffy and creamy.
