HARA PAYAAZ AND AMRITSARI BADIYAN KI SABZI This is winter time and the markets are full of SPRING ONIONS. sharing my grandmothers recipe using spring onions and amritsari vadis. HARA PYAAZ AUR AMRITSARI BADIYAN KI SABZI INGREDIENTS Spring onions. 1 bunch (500 gm) Onion. 1 medium finely chopped Garlic. 1 tsp finely chopped Ginger. 1/2 tsp minced Tomatoes. 1 medium puréed Amritsari vadi. 2 broken in small pcs Turmeric. A pinch Chili powder. A pinch Coriander powder. 1/2 tbsp Salt. As per taste. Mustard oil. 4 tbsp METHOD Chop the bulbs of spring onions fine. Chop the greens of spring onions in 1/2 inch roundels. Heat the oil to a smoking point. Cool it. Bring back to heat add the broken vadis and cook on medium heat till brown. Remove and keep aside in a plate. In the same oil add chopped onion. Sauté till light brown. Add ginger and garlic sauté for another 2 minutes. Now add tomato purée and sauté on medium heat till oil separates. Add all the spices and salt.mix well and sauté for one minute. Add the fried vadis. Add 1/2 a cup of water, bring to a boil and then cover and cook on simmer for around 10 minutes to soften the vadis. Once vadis soften...increase the heat and dry out all the moisture. Now add the chopped bulbs of spring onions and sauté on high heat for a moment. Add the greens, mix well and continue to sauté on high heat for two minutes. Cover and cook on simmer for about 5 minutes. No water to be added. Serve with paranthas.
