HOLY AMAZING!!! I made this soup last night and oh my word, its almost like dessert. Two things I did adjust in the recipe are instead of cooking a sweet potato (due to lack of time) I used canned Organic Sweet Potato Puree (Farmers Market Foods makes their cans with a BPA free liner) and instead of using a tsp of maple syrup or agave I used 1/4 tsp of stevia. Needless to say I was scraping the sides of the pot with my finger, delish!! Serve it with a side salad of butter leaf lettuce and toasted pumpkin seeds, olive oil, apple cider vinegar, mustard, and black pepper dressing, YUM!!
