HOMEMADE GRANOLA Makes about 7 to 7-½ cups When you make your own granola, you know what ingredients you used. Also, you can add your favorite nuts and dried fruits! This is my own granola recipe that I want to share with you. I do not eat it as a cereal. I eat my granola, about ¼ cup (4 tablespoons) with low-fat Greek yogurt, plain or with fruits, and a bit of honey on top. I love to eat crunchy foods and love the flavors of all these wonderful ingredients! INGREDIENTS 3 cups rolled oats ½ cup slivered of sliced raw almonds ½ cup chopped pecans (you can substitute for walnuts or cashews) ¼ cup pumpkin or sunflower seeds ¼ cup Flaxseed meal ¾ cup unsweetened coconut ¼ cup dark brown sugar (if you have light only, that is o.k.) ¼ cup pure maple syrup (or you can substitute for a good honey) ¼ cup vegetable oil ¾ teaspoons table salt 1 teaspoon cinnamon 1 teaspoon vanilla extract 1 cup dry cranberries (you can also divide into equal quarter cup measurements of your favorite dried fruits, like banana chips, golden raisins, apricots, figs, peaches…) PROCEDURE Preheat oven to 300 degrees F. In a large bowl, combine oats, nuts, coconut, brown sugar, salt and cinnamon. In a separate medium bowl, combine, maple syrup, oil and vanilla. Add this mixture to previous dry ingredients and combine well. Pour into large sheet pan, 18” x 26” and cook for 1 hour, stirring every 15 minutes (set a timer every time/ you are going to do it, 4 times) to achieve an even color. Remove from oven and transfer into a large bowl. Add cranberries or any dry fruit that you like. (total, 1 cup, which means you can do, ¼ cup of different fruits to make that cup). Mix well until evenly distributed. Allow to cool completely before storing in an airtight container.
