Had the brett graham competition today... AMUSE BOUCHE- Pickled eschallot with egg 63 yolk. STARTER- Pulled duck maryland with beetroot puree and 2hr slow cooked leek. MAIN- Pan seared duck breast with duck jus, eggplant puree, char grilled asparagus and butter roasted carrots. DESSERT- Orange and mint pavlova with strawberry puree and lemon whipped cream topped with dehydrated mint leaves... I didnt win but had the best day ever making these dishes and i am so happy and proud of my food... Its a big win in my book!!!
