Happy Friday! Here are a few food safety tips as the temperature goes back up over the weekend. (1) Rule of thumb is keep foods out of the temperature danger zone of 41-140F. and discard anything that has been in that temperature range for longer than a two hour time period. If the food is held when the temperature is over 90F, that rules applies at the one hour mark. (2) It isnt the mayo in your potato salad or chicken salad that may make you sick. More likely it is the potatoes or the chicken. Mayo contains vinegar which helps keep bacteria from growing. However, chicken and other protein foods, as well as cooked potatoes are a great environment in which bacteria can grow. (3) Cover patio and picnic foods with plastic wrap, foil or even a clean dish towel to keep flies from landing on them. Flies are not known for their hygenic habits, so keeping their dirty, little feet off your food goes a long way to keeping food safe.
