Happy Friday folks, Baking, for me, is a science and an art. In my quest to bake nutrient dense bread I have made a few updates to my recipes. I am excited to share them with you. My breads now begin with the flours and seeds going through a simple process to help neutralize phytic acids. Phytic acids are present in grains and seeds and can limit our ability to assimilate the nutrients we hope to get by ingesting these foods. You may notice a slight tang in flavor. To my delight, doing this simple process produces a bread with a real crust and yummy chewy texture. In my experiments the breads have a long counter/shelf life and toast up for a nice crunch. As a side, no xanthan gum needed. The square Multi Grain Bread, Sandwich Bun and Wraps will continue in the original recipe. Have a wonderful weekend.
