Have to laugh at tonights cooking charade. Found a recipe for tilapia that called for fresh squeezed lemon juice. Decided as long as I was squeezing lemons, I might as well make an extra 2/3s cup and make the warm lemon pudding cake. Bichons were bugging me for their dinner, but I told them , Get out of MY kitchen and wait. Discovered I had no parsley for the fish, so googled a substitute. Got that dinner into the oven then had to start the rice right away. Back to the dessert. Warmed, microwaved and rolled/bashed six lemons on the cutting board. Forgot the recipe for warm lemon pudding but remembered it was in my e-mails. Found it, but it read like a book and I was using my i-phone. Finally was ready to put everything into the simmering pudding dishes. Realized when the volume was too low for four servings, that I forgot the milk. Went back to my i-phone. Where the H*ll does it say to add the milk? Managed to get all four dishes out of the hot water on the stove without much trouble and added one cup of milk, hoping for the best. Back into the individual serving dishes when I saw the freshly squeezed lemon juice still on the counter. The transition was not as smooth removing the dishes from the steaming water the second time. With everything back in the bowl the lemon juice was added with as little stirring as possible. After the mixture was back in the little bowls in the hot water in the turkey roaster, I carefully put everything into the oven. Realized 10 minutes into the baking that I had turned off the baking feature. I thought, Three strikes and your out, :-(. Meanwhile the dish the fish was cooked in was looking rather black in outside areas. The rice however was perfect. In the end the fish was somewhat overcooked but tasted fine mixed with the rice. Absolutely amazed that the warm lemon pudding cake came out good. Luckily the dogs were happy to eat dinner an hour late and immediately forgave me for shooing them out of the kitchen at their regular dinner time,
