Have we talked about some of the best home cooking in town, Cathys Cupboard in Nichols Hills Plaza from the early 80s till ??? Ill take a stab at what I know, or think I know. Feel free to correct me if Im wrong. What I know for sure is that the pot roast was the best Ive ever eaten, and although I have 2 copies of her cook book (yes, theyre exactly the same, and they are really dirty from use), I cant make a pot roast that tastes like hers! I think she started her restaurant across from Baptist Hospital, but we didnt start eating there till she opened in Nichols Hills Plaza. Each night had a different menu specialty item, so we ate there about 3 nights a week, because we never ate at home. The recipes were her grandmothers, and I think her grandmother was in the kitchen, at least some of the time. I heard she moved to Arkansas after she closed the restaurant. Desserts were to die for, all homemade...salad dressings, soups, everything was homemade. She cooked so much better than I could...thats one reason we never ate at home. We left in 92, so she must have closed after that...what a loss to the community! Any other die-hard fans?
