Have you battled hypoglycemia after following a sugar- and grain-free diet for treatment of a mold-related illness? If so, the remedy is quite simple—juice some carrots. Not only are carrots full of antifungal properties, but they also contain fairly high levels of natural sugar. The body needs a certain amount of sugar, but not too little and not too much. Too little sugar in the blood results in hypoglycemia. Too much sugar in the blood results in hyperglycemia. If left untreated, either state could lead to more serious health conditions. When most forms of sugar and grains are removed from the diet, it is important to eat generous portions of vegetables because vegies are carbohydrates, which convert to sugar in the body and provide it with energy. If you are feeling shaky or weak or suffering from a lack of energy, you may want to consider increasing the amount of vegies you eat. When we were ill from mold and chemical exposures, we removed all forms of sugar and grains from our diet with two exceptions—carrots and green apples. We selectively added these two sources of sugar into our diet because they both contained antifungal properties. We added the carrots and a few slices of green apples to two other fungus-fighting ingredients—garlic and ginger—and juiced them together to create a powerful antifungal drink. We never had any challenges with hypoglycemia due to our daily juicing regime.
