Herbalife pumpkin zucchini bread INGREDIENTS 8 scoops HERBALIFE French Vanilla Shake Mix 2 cups light baking flour 1 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1/2 tsp ground nutmeg 1/2 tsp ground cloves 1/2 tsp cinnamon 1/3 cup + 3 TBSP egg whites 1 cup Splenda Blend 1 cup canned pumpkin 1/2 cup unsalted butter (softened) 1/3 cup unsweetened applesauce 1 1/2 tsp vanilla extract 1 cup shredded zucchini 1/2 cup chopped pecans or walnuts PREPARATION Preheat oven to 350°. Mix dry ingredients in a medium size bowl. In a large bowl, combine egg whites, Splenda Blend, pumpkin, applesauce, butter, and vanilla; whisk until smooth. Gradually add dry ingredients to pumpkin mixture and mix well. Stir in zucchini and nuts. Pour into two greased and floured 9-in. x 5-in. loaf pans. Bake at 350° for 45-50 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes.
