Here is the awesome Turkey Roll made in chicken stock. Its a delicious, quick and easy meal to make. 1 pk of Jenno turkey breast (has 2 pcs in pack) Sm bag of baby carrots - whole 3 lg stalks of celery - cut into 1 pcs 5 or 6 pearl onions - whole 10 to 15 cloves of garlic - whole (more or less to your liking) 5 to 6 med to lg tomatos - very ripe (or 1 sm can of diced tomatos) hand full of Cilantro - fresh or tbsp dried 1tsp onion powder 1 tsp garlic & parsley mix 1/2 tsp coriander (opt) 1/2 tsp turmeric (opt) salt & pepper to taste 3 tbsp olive oil 1 tsp sesame oil 1 1/2 cups chicken stock (low sodium) Start your oven on 350 - also have some water boiling for tomatos. When water starts boiling add tomatos for only about a minute or two. You will see the skin starting to crinkle. When that happens, pull your tomatos out and peel the skin off and chop them into sm diced pieces, put aside. Heat up 2 tbsp of olive oil and sesame oil, start pearl onions, roll them around to coat with oil, then add celery, carrots and garlic. Saute for a few minutes and remove from pan. On the side, rinse turkey off and sit on a paper towel, sprinkle some garlic/parsley mix on top. Let stand for a minute or two. Add remaining olive oil, while heating, dry the turkey with paper towel really well. Its ok if some of the spice comes off. Once real dry, add turkey and saute on both sides for a good minute or two. Add your veggies back to pan. then add your tomatos, and herbs/spices then 1 to 1 1/2 cups of chicken stock. You want to add stock but dont submerge totally, just enough for it to simmer in. Get it to simmer for a minute, cover and stick in the oven for 1 hour. We made broccoli on the side but you can do anything youd like. Rice, potatos, pasta. We have been trying gluten free so we didnt do the carb thing. Enjoy....
