Here is the completed cheesecake. And - as promised - here is the recipe. This was adapted from a recipe I found on the Food Network website. Based on the review comments for it that I read, I modified the recipe a bit so that it wouldnt be quite as sweet, and amped up the vanilla a little bit. Preheat oven to 275. Spray 8-inch springform pan with nonstick spray. Crust: -------- 1 cup graham cracker crumbs 2 Tbsp sugar 2 Tbsp softened butter (I ended up using about 2 1/2 Tbsp) Combine together and press into bottom of springform pan. Cheesecake: ----------------- 3 8-oz pkg cream cheese, room temperature 1 1/2 cups sugar (the original recipe called for 2 cups) 3 eggs, room temperature 1 1/2 Tbsp vanilla (the original is 1 Tbsp) Beat together cream cheese and sugar until smooth. Add eggs, one at a time, and then add vanilla. Pour over graham cracker crust and bake for 90 minutes. Turn off the oven and leave cheesecake in the oven for 2 hours, 45 minutes. Do not open the oven door during this time. Remove from oven and allow to cool completely, chill overnight and top as desired. (I put the cherries on before the overnight chill so that I could take the photo).
