Here is the recipe for Persimmon Bread. It is very moist, not very spicy. We wanted a traditional recipe. If you like, you can add 1/2 t of nutmeg and 1/2 t of cinnamon. Heat oven to 350. Coat 9x5x3 loaf pan with Pam. Cream 1/2 cup soft butter and 1 cup sugar. Add 1 t vanilla, 3 large eggs, 1 1/2 cups persimmon pulp. In another bowl, mix 2 cups flour, 1 t soda, 1/4 t salt. Add dry ingredients to wet. Add 1/2 cup raisins and 1/2 cup chopped nuts, as desired. Bake 50 to 60 minutes. Let cool for 10 minutes. Remove from pan.
