Heres a very healthy spin on your Thanksgiving mash - a favorite that my Mom has made for years, and it seems to be universally loved by kids due to its natural sweetness: 3 pounds of organic potatoes 2 pounds of rutabaga, peeled and diced 1 pound of organic carrots Salt, pepper and a just a touch of butter or other fat Cook potatoes in one pot, and carrots and rutabaga together in another. Mash the potatoes as usual and set aside. Run carrots and rutabaga through a food processor until smooth. Blend all together using a hand mixer, adding a tablespoon or two of your favorite fat (trans fat free), salt and pepper. DELICIOUS and rich in nutrients! Enjoy for Thanksgiving or anytime in the Fall and Winter months.
