This poached pear recipe is one of my favourite desserts to serve on a special occasion - the flavours are quite simply sublime and refreshing too. If you feel the need to impress your guests, or treat your family, this ones a winner! 3 large Bosc pears (choose very firm ones), peeled, halved, and cored 4 cups coconut water 4 thick slices ginger 2 stalks lemongrass, bruised small pinch of saffron threads or pinch ground turmeric 6 scoops young coconut ice cream or other dairy free icecream (optional) 1/4 cup chopped activated almonds or other activated nut or seed. In a large saucepan, mix the coconut water, ginger, lemongrass and saffron or turmeric together; and bring the mixture to the boil. Gently lower the pear halves into the liquid, making sure they’re fully submerged. Simmer, covered, for 45 minutes. Fish out the pears; set aside, covered. Strain the poaching liquid; discard the tea leaves. Put the strained poaching liquid back on the heat and reduce it over low heat until syrupy. Plate the pear halves and drizzle the syrup on top and serve with coconut juice ice-cream and almonds Makes 6
