Hey Tribe - we have a very special guest today for all you thermomix crew...Emily Coupar. Over to you Emily. My journey into Paleo came about in 2012, when my husband was diagnosed with a rare tumor known as a squamous cell carcinoma, which was located in his groin. Spending 6 months in and out of hospital having surgery and radiation, I had plenty of time to reflect on what would contribute to this. I was forced to look at our lifestyle and make some changes. What could we do to prevent it happening again? Once cancer creeps into your life, its very difficult to put it behind you - it’s like a constant shadow on you. This led me to look at our food and to drop gluten, then soy, then dairy as the more I learnt about the bodies physiological response to food, the more I believed it was related to the cancer. It was a personal trainer who steered me towards Paleo and I’ve been a strict Paleo convert since! I’ve never felt fitter in my life, my skin is great, my sleep is awesome and I just love life! I am 35 years old and a Registered Nurse, a Thermomix Consultant, Personal Trainer and in my spare time I work at the Paleo Café on the Mornington Peninsula in Victoria. The more I read about Paleo, the more I believe that this is the way our bodies were meant to eat and be. For me, it’s not just about the food. Where our food comes from, our sleep, exercise, the chemicals we put on our skin, in our homes, and our footprint on the environment are all just as important. My inspiration has come from many Paleo greats, but mainly Chris Kresser, Robb Wolf and Nora Gedgaudas, I spend my time listening to Podcasts, reading and immersing myself in new knowledge every day. The Paleo journey has not always been easy, in fact it still isn’t. I’ve faced criticism and disregard for my way of life from family and friends, making it a difficult path; “Oh, you’re not allergic to gluten, it wont hurt you.?”, “Why wouldn’t you eat dairy, you need your calcium?…” I see this as an opportunity to teach and spread the word, and this is why I’ve recently launched my very own cookbook, “Mixing It The Paleo Way” which is a cookbook designed for use with a Thermomix. All the recipes are Paleo friendly, gluten, dairy, soy and grain free. It’s easy to follow, using only accessible, Australian ingredients, simple family food as I think this is what we all need. You can find it on my website paleothermie.au. Here is a recipe from my new book STICKY LAMB RIBS I decided to try lamb ribs after finding my local farmer selling them dirt cheap. Serves 4 2 x 800 gram racks of lamb ribs 40 grams quality fat (coconut oil, tallow etc) 2 tbsp. sumac 2 tbsp. ground cumin 1 tbsp. salt 1 tbsp. pepper 2 tsps. smoked paprika 2 cloves garlic 1 tbsp. coconut sugar (optional) 20 grams fish sauce 20 grams coconut aminos Place peeled garlic cloves into Thermomix and chop 3 seconds, speed 7, add oil, sumac, cumin, pepper and salt, mix 1 second, speed 4, rub all over lamb and set aside a at least one hour or overnight to marinade. Place lamb in baking or roasting dish and bake covered in oven, 150 degrees, 2 hours Remove from oven and cut into individual ribs. Combine sugar, aminos, and fish sauce, place lamb on a rack over a lined baking tray and coat with the sauce, bake further 15 minutes until sticky. I serve with roast pumpkin and sweet potato.
