Hi Cindy, This one is for you FRUIT CAKE 16 ozs butter 14 ozs sugar 16 ozs flour 8 medium sized eggs 1 Tbsp baking powder 1 Tbsp lime zest and lime juice Cream butter and sugar until light and fluffy Add eggs one by one with lime zest and juice ,beating after each addition Add baking powder to sifted flour and fold into the creamed mixture In a food processor, mince 8 ozs cherries 8 ozs prunes 8 ozs raisins 4 ozs dried apricots 4 ozs dried cranberries 8 ozs mixed fruit Remove from the processor and put in a plastic or glass container Add 2 tbsp. molasses 1/2c strawberry jam or preserves for a real special taste, add 3Tbsp tamarind paste 1 tsp grated green ginger 1/2 tsp cinnamon powder Mix well and add to creamed mixture. For a dark color, add a few tablespoons of food browning you can also add 1/2c wine mixture to the fruit if you so desire Grease a 12 inch cake pan , flour and line with wax paper. Make sure the wax paper fits comfortably in the pan. pour mixture into the pan. It should be about 3/4 full. Bake in a preheated oven 375F. Bake until the cake shrinks from the sides of the pan. remove and cool. Add some wine to the cake if you prefer. wrap in cling, then in foil and store in a covered container. the longer it stays, the more the flavor develops , because of the addition of the molasses. for a light fruit
