Hi everyone! After yesterdays easy lentil recipe for today weve chosen a beautiful salmon composition. Preparation and cooking time: 30 minutes. Difficulty level: medium Ingredients for 4 persons: - 4 pieces of salmon filets, 120-140 g each - one bunch of flat leaf Italian parsley - one lemons zest and juice - 2 pieces of medium sweet potato - 1 medium broccoli - 2 cloves of garlic - 1 fresh chili - sea salt and freshly ground black pepper - 2-3 tbs olive oil - one bunch of cherry tomatoes (8 pieces) Preparation: First wash the sweet potato, cut it about 3 cm thick disks. Rub it with olive oil and season it with salt and pepper. Bake it on a baking paper in a 200° hot oven. Than boil some water with salt for the broccoli. Place the salmon filets on another baking tray (we always use baking paper, without oil, so when it is ready the skin of the salmon sticks to the paper. We serve it without skin!) Season them with salt and pepper and a few drops of olive oil. Than divide the chopped parsley mixed with the lemon zest and press it on the top of the salmon. Pour some lemon juice on each. Place the cherry tomatoes next to the salmon on the same tray. When the sweet potato is already about 15-20 minutes roasting, place the tray with the salmon in the oven too. Cut the broccoli for small florets, boil it for 3-4 minutes. Heat up a small frying pan, add the tbs olive oil, and carefully fry the sliced garlic and chili. Remove the broccoli with a slotted spoon from the water and mix it with the chili and the garlic. By now the salmon and the sweet potato should be ready. Just arrange everything nicely on the plate and enjoy! We recommend a glass of Demi-sec white wine, something fresh! Bon appétit!
