Hi, summer is the season of lip-smacking mangoes and chilled cool cool kulfis…everyone loves to have them anytime..so why not make a delicious combination of both and surprise your loved ones..lets try this yummy recipe for tonight’s dessert.. KESARIYA AAMRAS KULFI Serves: 4 INGREDIENTS: Mangoes: 4 Milk: 1 ltr. Khoya: 50 gms. Condensed milk: ½ cup Sugar Grated pistachios, Grated cashew nuts Green cardamom: 2-3 powdered Saffron METHOD: 1. Boil the milk, add khoya and condensed milk and reduce it to half and, keep stirring constantly till it thickens. 2. Add sugar and grated dry fruits, saffron and powdered cardamom when it is reduced and keep it aside to cool on room temperature. 3. Slice off the top of the mangoes thinly. Then using a thin, sharp and long knife probe into the mango carefully, rotate the mango slowly and carefully till the seed is completely dislodged from the flesh. Using a spoon remove the seed carefully. 4. Now pour the kulfi mixture into the mango, cover it with the sliced off top of the mango and seal it with dough. 5. Keep it in the refrigerator till it gets set. 6. When it is set, peel off the skin of the mango and cut into round pieces. 7. Garnish with finely chopped dry fruits and serve.
