History lesson! In 1958 The Delaney Amendment was a regulation added to the FDA to help understand how carcinogenic certain chemicals are to humans. A chemical had to demonstrate tumor formation in mice or rats that increased with increased exposure to the chemical for the life of the animal (and of course tumors needed to be absent in a control group). If any tumor formation was found there was a zero tolerance policy in regards to food additives. This amendment was later rescinded in 1996 because there are too many chemicals to test and the tests were very expensive and lengthy (aprox 2 years per chemical). This was the start of our obsession of environmental chemicals and their link with cancer which took focus away from nutritional causes of cancer. For example when put through the rigors as outlined in The Delaney Amendment casein, the protein found in dairy, is one of the most well documented and widely consumed carcinogens in human history. Being free of dairy does not however mean being free of rich creamy sauces like this one pictured here which is cashew based.
