A Chipotle pepper is a dry, smoked ripened jalapeno pepper or red jalapenos. They are added to any dish that needs a smoky flavor with a little kick especially barbecues or marinades. Most of the natural ‘heat’ of the jalapeno is retained in the drying and smoking process. Some Chiptole sauces that are served in restaurants also use red onion, lemon juice , red chilli flakes/ dried ancho peppers/ guajillo chiles also a combination of red tomatoes and green tomatillos along with Mexican oregano. The way of preparing it is either by smoking the tomatoes, simmering one or two types of whole dried/ smoked chillies. ****Chiptole Mexican grill Tomatillo-Red Chili salsa ( Hot) : Sauté 2 chopped Tomatillos with 2 cloves of garlic, 1/4 tspn cumin and Salt. Add 2 Chile de Arbol (chillies), 1/2 tspn Black Pepper, 1 tbspn Red Tabasco® Sauce and grind in a blender with 1 tbspn water. ****Standard Chipotle hot sauce recipe : 1 large Tomato, peeled and gutted of most seeds/juice. 10-15g freshly powdered chile de arbol or 5 chipotle red peppers ( red smoked jalapeños) 2 cloves of garlic 2 tablespoons of fresh cilantro. 1 tablespoon lemon juice. 1/4 cup red onion. 1 tablespoon kosher salt. 1 teaspoon black pepper 1 tbspn of red Tabasco hot sauce / similar hot sauce like cholula or El yucateco brand Saute the tomatoes, onion, garlic in oil, Mix this with spices and grind in a blender. Increase the number of chillies as per the desired level of hotness. ***Spicy roasted tomato chipotle hot salsa : Heat the oil in a large heavy bottom saucepan over medium heat and saute chopped tomatillos, red smoked jalapenos (chipotle peppers), onion and garlic for about 3 minutes. Do not burn the seeds. Add the salt, Mexican oregano and cumin and saute for another 2 minutes. Add cut dried chiles to the pan along with water and vinegar, after the spices have become fragrant. cook covered for about 10 minutes over low heat until everything is mushy, cooked and most of the water is evaporated with just enough liquid to blend it all together. Once cooled, blend into a smooth purée, transfer to an air tight container and store in the fridge. ***Homemade Tabasco hot Sauce 1/3 cup tabasco peppers ( smoked red jalapeños) 1 cup vinegar, your choice, white, cider, wine 2 garlic cloves 1 tsp. salt Simmer the peppers in the vinegar and salt,briefly watching carefully, in a well-ventilated area. Remove from heat, cover and cool. Add crushed garlic and puree in a blender or food processor until smooth.
