Homemade Mayo! 2 raw egg yolks from Fresh Eggs 1/4 cup red wine vinegar 1 tablespoon Dijon mustard (Maille or Bornier) Salt to taste 1 1/2 cups mildly flavored oil (mellow olive oil, canola, or a blend of both like I do) Directions Place the egg yolks in the bowl of a blender or food processor and add the vinegar and mustard. Add a dash of salt. Turn the machine on and blend. Then slowly start to pour in the oil through the opening of the selected device. You will see the mayonnaise begin to emulsify. Disengage the bowl and take a small taste and decide if you should add a little more salt. Enjoy and use in the dressing below, it is so much better than Jarred and preserved mayo!
