How to make a great meal for a cloudy day while you help the guys put a roof on the chicken pen............. Spend most of the morning with the Grandson and friend re-boarding the horse stall. putting new latches on the keet house, pulling unnecessary T-post from the ground, re-applying trim boards on the tack room.. and other misc touch up kind of things. When the big guys get here.. set up a table for tools, bring out said tools, and begin herding young chicks and keets out of their home... Go to the house, toss some frozen chicken into a pot and leave to boil... Go back outside.. herd the chicks away from the yard area where lumber will be thrown from roof top high as the new roof goes up. Back to the house to make certain the pot is not boiling over.. make a pot of coffee... Back out to the construction area.. herd the Keets OUT of the hutch again Locate some tools for the guys.. take a few pictures Move the Chicks AGAIN.. this time move them into the big chicken pen... AND LOCK THEM IN! Find the keets hiding in the tall weeds.. Back into the house.. remove cooked chicken to cool for de boning, add seasonings and milk to the water bring back to a boil Search the kitchen for white flour ... or bisquick.......... NOPE!! NONE!! Take the bag of flour tortillas out of the fridge... cut into 1 inch squares.. and add to broth. De bone chicken and return to pot, cover.. and lower to a simmer. Return to construction of the keet/chick house, measure and cut some 2 x 4s for placing between the long running rafter boards... Go down to the bottoms .. and fire the semi automatic 12 gauge (with scope) and AccuTip sabot slugs.... hit the target twice at 100 yards. Back to the construction site.. remove the keets that are settling ON the roof the guys are installing... Go to the house, pour a cup of coffee and taste the chicken and dumplings... Back out.. clean up the tools and materials, and return to the house. The guys are on a schedule .. and cannot stay for dinner.. so I put theirs in mason jars.. thank them.. and send them on their way.. And THAT .. is some FABULOUS Chicken and dumplings! BTW.. Am I wrong?? Or is that the best looking bunch of hard working young men in New Mexico??? ( I COULD be partial because they are MY BOYS!)
