Hubby gifted me this steamer for the anniversary...so made idlis today. Made the batter from the scratch too! Got the recipe from the internet. For an amateur like me, it was a success!. (Experts, please forgive me!) Here is the recipe: Ingredients: Uncooked rice: 1 cup Cooked rice: 1 cup Flattened rice/Chivda/Chire: 1/4th cup Methi seeds (fenugreek): 1/4th teaspoons Salt to taste Process: 1. Soak one cup uncooked rice, one cup cooked rice, and 1/4th cup flattened rice (chivda/chire) in a deep bottom pan. Wash the rice till water runs clear and soak the two types of rice and the chire in lot of water. Keep this undisturbed for 2-3 hours. 2. After two hours, soak 1/2 cup urad dal and 1/4th teaspoon methi danaa (fenugreek seeds) in another bowl. 3. When the dal has soaked for about 30 minutes, grind the dal and methi mixture to a fine paste. No need to soak dal for more than 30 minutes. 4. After the rice has been soaking for nearly 3 hours, drain the water and grind the rice mixture to a fine paste. 5. Mix both the rice and dal mixture in a deep-bottom bowl and add salt to taste. Keep in a warm place covered over-night (nearly 8-10 hours). No need to add air-tight cover because this batter will rise. 6. In the morning, check the batter. It will be covered with bubbles and double in size. (For some reason, my batter did not rise as much so I sneakily added a satchet of Eno fruit salt.) 7. Greased the idli moulds and steamed the idlis for 20 minutes on medium flame. Pillowy soft idlis at home!
