I LOVE Red Lobster. My parents used to take me as a little girl and I would get popcorn shrimp. Maybe thats why even though I live in Seattle surrounded by great seafood places I still crave it. My husband from Seattle says how do you like Red Lobster...its not even a REAL seafood place. Well growing up catholic in Michigan Red Lobster IS the seafood place. During Lent I knew that meant a few Red Lobster trips. Since we live downtown the only way Im getting to go is when I visit Michigan. A few weeks ago when I was in town my mom had a box of the Red Lobster cheddar bay biscuit mix on top of the frig. I of course bought 2 boxes to bring back home! Almost 2 weeks latter the snobby seafood husband says hey when are you making those Red Lobster biscuits. HA!! Anyways heres my results in case you didnt know about these and were curious....I found mine at Meijer -the biscuit mix plus *your items* *1/2 C shredded cheddar( hand shredded of course) *3/4 C cold water *1/3 C butter Pretty much just add mix , water , cheese(I used 1/3 bar of a 8oz bar of sharp cheddar cheese) and stir. Plop onto parchment lined sheet and bake 14-16 min. Melt butter and mix with garlic packet. After baking biscuits pour butter on top. -so I made 8 large ones..box days 8-10. Id suggest going with the 10. They will look more similar size to the restaurant. -I cooked 15 min , BUT they stuck to the parchment paper some. Next time lightly spray paper. -Butter mix is more then plenty. Dont use all the butter or youll be eating a soggy mess (Im saving my leftover butter to scramble eggs!) If I had to nitpick Id say the restaurant ones are slightly more garlicky. Overall these were easy to make, yummy, cheap, and would satisfy your craving if you cant get to the restaurant. 4.5 stars out of 5
