I Met a woman who lives behind me that lost her son several weeks after I lost Carly ... They went to the same HS but a 2 year difference... We have become instant friends... We gather together every now and then and are able to get real with each other over the death of a child.. We laugh, cry and relate... We are immersed in sadness but together we have also found satirical humor in what people say or dont say ( we know people are stumped and uncomfortable) in what we are dealing with, in any case, Im grateful for the relationship... We have dinner on the breezeway.. And of course lots o wine lol ...the weather has been warm in late September . Roasted chicken was on my mind.... Light, comforting and always reliable....so I picked up bone-in, skin on chicken breasts, smeared them in butter and Herbs de Provence ( basil, Rosemary,thyme,parsley,marjoram,lavender ,tarragon,fennel seed).. You can buy it already packaged... Sprinkle with mixed olives..fingerling potatoes , lemon halves, drizzle olive oil over everything!bake at 350 for about 2 glasses of wine.. Say 45 minutes .. Then douse in some Pinot Grigio... Let steam off in oven... Sauce is self starting... Crusty bread is a must to sop up the incredible juice... Warm, salty,tangy, tart... A lot like life...xo
