I butchered two laying hens today. As we are eating them I realized I should have taken some pictures. Thats a lost skill. I started with two retired egg hens which are tuff old birds. I cooked them in the crockpot for three hours than put them in the fridge to cool overnight. Today I striped the meat from the bones. Boiled the bones and skin on high heat for an hour. Took out bones put skin, broth, and onions in blender. Added meat, potatoes, stock, and two table spoons corn starch.
