I finally perfected my Pumpkin Pancakes recipe... 1 cup pumpkin 1 1/2 tsp cinnamon 1 tsp pumpkin pie spice 1/2 tsp nutmeg 2 tbsp sugar 2 tbsp brown sugar 1/4 tsp salt 1+ cup milk 2 ex large eggs 3 tbsp unsalted butter melted 1 cup flour 1 tsp baking powder 1 tsp baking soda Mix together 1 cup milk, eggs and pumpkin. Add everything else minus the butter. Mix together until smooth. Mix in butter. Add a little more milk to thin out if needed. Ladle onto a skillet (heated to 350 deg). Cook and serve.
