I get a lot of people asking What does the chef serve his family for Thanksgiving this time of year. Well, to start we always harvest a wild bird (got one with my little girl this time) and cook in the smoker. But I thought Id share one of my all time favorite recipes for dressing with you all. This one has fresh oysters and green chiles and is just bursting with flavor. Enjoy Green Chile & Oyster Dressing Ingredients 1 pint chicken stock 1 pint clam juice 2 dozen freshly shucked oysters 1 cup green chilies (poblano peppers roasted, peeled and seeded) 1 cup chopped onion 1 cup chopped celery 1 cup chopped green bell pepper 3 cloves fresh garlic, minced 1 ½ tablespoons extra virgin olive oil 1 ½ tablespoons creole blend of seasonings 4 cups lightly toasted Challah bread, cut into 1/2-inch cubes (approximately 4 to 5 slices) 1 cup toasted panko bread crumbs 2 teaspoons dried sage 2 teaspoons dried parsley 1/2 teaspoon freshly ground black pepper Preparation Sauté the onions, peppers, celery, chilies and garlic in olive oil until soft. Add in all dry seasonings then deglaze with the chicken stock and clam juice. Bring the mixture to a simmer, then add in the fresh oysters. Simmer for 4 minutes. Add in challah bread and panko crumbs and combine thoroughly. Allow to soak in for 5 minutes, then transfer to an oven dish and bake at 300 degrees for 8 minutes. Check for seasonings at the end and serve hot.
