I grew up eating desert for breakfast...truth! My mom is a great cook and baker....shes 100% Italian, you wouldnt expect it to be any other way!! There was always cakes, cookies, and pies around. No one in my family is a big breakfast eater...I honestly dont remember there being a time of eggs, bacon, and toast for breakfast. It was either baked goods or cereal. They werent always sugary sweets...we had a lot of zucchini cake and bread which I love! Ill probably come up for an overnight oat recipe for that when summer comes! This recipe is like licking the beaters of pumpkin roll batter!! Desert for breakfast...but in a much healthier, clean way!!! Pumpkin Pie Overnight Oats This is one of the easiest, yummiest, and well balanced breakfasts that can be thrown together the night before, and is ready when you are in the morning! There is no longer any excuse for not eating a delicious and satisfying breakfast, no matter how busy your mornings are! This pumpkin pie overnight oatmeal is guaranteed to spice up the most important meal of the day! Method I mix the pumpkin, milk, and yogurt together in a single tupperware container. Then I add the rest of the ingredients and stir to combine. Cover and refrigerate overnight (or for at least an hour so the oats soften and absorb the liquid). Top with syrup/honey/agave or chopped pecans for crunch if desired! Enjoy cold. You can microwave for 30-60 seconds if you would rather they be warm but I have only ever eaten them cold! Ingredients 3 tbsp pureed Pumpkin 1/2 cup Unsweetened almond milk (plain or vanilla) or low fat milk of choice 1/3 cup Plain low fat Greek yogurt 1/4 tsp Pumpkin pie spice 1/4 tsp Cinnamon 1/8 tsp Salt (optional) 1/2 cup Old fashioned oats (I use quick oats but you can use either) 2-3 tbsp Vanilla Protein powder (I used Vanilla Shakeology, of course) Optional: 1 tbs maple syrup, agave, or honey, chopped pecans or almonds for topping
