I had an odd bottle of orange spice mead. So I stuck it in the fridge last night for tasting today. (The other bottles are still aging/settling out). Popped the top and the aroma of allspice, ginger, citrus and honey filled my nose. Smells like the holidays and then the first sip. All I can say is WOW! Like taking the train to flavor town. Every spice and every hint of citrus was on the pallet with the sweet taste of honey. This bottle had only been sitting / aging for seven days and it is wonderful. I can only imagine what the rest of it will taste like after aging a month or even longer! I almost wish I could sell it... LOL! The apple mead has about another three or four days of fermenting to go before bottling and I cant wait for tasting day!
