The marrow is a delicacy. It is a lucious, flavorful part of the dish which imparts its flavors to the rest of the meat. I felt cheated. It may have been melted away during the process to add flavor to the cut of veal. I have to say it was not as tender and delicious as thoes I have tasted at Del Frisco s in Houston, Texas, Galleria location, or at McGuire s Irish Pub in Pensacola, Florida.
