I have created yet another cake from scratch tonight! allrecipes/personalrecipe/64314723/canned-carrots-cake/detail.aspx Phaes Homemade Canned Carrots Cake Makes 1 nine-inch round cake (double recipe if you want a layer cake) 1 can sliced carrots, rinsed and drained, slightly broken up 3 tablespoons butter, softened 1/2 cup extra virgin olive oil (can substitute any vegetable oil) 2 whole eggs 1/2 cup dark brown sugar (can substitute light brown sugar or use all white sugar) 1/2 cup white granulated sugar 1 tablespoon Vermont maple syrup (must be real maple syrup, can be left out if you dont have any) 1 tsp vanilla 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground nutmeg 1 cup whole wheat flour 1 tablespoon baking powder 1/4 tsp baking soda 1/4 cup oat bran (can substitute any kind of bran, unflavored oatmeal, or double the granola instead) 1 tablespoon ground flax seed (optional - I put flax in all my cakes/breads now) 1/4 cup chopped pecans (optional, but highly recommended) 1/4 cup granola cereal, any kind, slightly crushed (I used Sunbelt Bakerys banana nut granola) 325 degrees 25 to 30 minutes or until edges look browned and the center doesnt jiggle when lightly jostled in oven (toothpick wont come out clean as this is a very moist cake). Optional add-ins: 1/4 cup flaked coconut, dried fruit of your choosing such as dates, raisins, or pineapple. Fresh pineapple may be added if well drained and patted dry, but add more flour, bran, or oatmeal if you add fresh fruit! Excellent served chilled with a traditional cream cheese frosting, or my light and fluffy Crème Fraîche Topping, below: 1 8-ounce package of Vermont Butter & Cheese Creamery crème fraîche (well chilled) 3/4 cup confectioners sugar 1 teaspoon butter, softened 1/8 teaspoon pure vanilla extract To make topping, put all ingredients in a bowl and beat til fluffy and light. Makes enough for topping one layer, double if you want more. For serving with warm cake, I highly recommend Marshas Coconut Pecan Frosting at allrecipes/recipe/coconut-pecan-frosting-i/detail.aspx which can be spooned on the cake still-warm for a gooey delicious treat!
