I have often been asked...What is the best dish you make? Here it is..... Mega Veggie Extra Meaty Super Duper (#85) Spaghetti Sauce by Rob Harris. My #1 Go To Dish! Proportions are for 1 Crock Pot: Initial Dump in the Crock Pot 28 oz Peeled Centos Tomatoes 28 oz Contadina Diced Tomatoes 14 oz Pomi Strained Tomatoes 1/4 can of Tomatoe Paste Handful of sliced black olives Handfull of sliced green olives 1/2 cup red wine (cab) Handfull of frozen peas Time to Brown the Meats 1.5 lbs ground beef (80/20 and strain) 3/4 lb of italian sausage sweet (strain) 5 italian hot links (cut into bit size pieces after cooking) Dump in the Crock! Sautee the Veggies (NOTE: Use a hot pan and crisp the veggies. Do not over cook as they will breakdown in while slow cooking in the sauce) Sautee in Groups 1 onion 1/2 green pepper 1/2 red pepper 1/2 yellow pepper 1 jalapeno 1 carrot 1 1/2 celery stalk Dump in the Crock! Sautee Bag of spinach Dump in the Crock! Sautee the Mushrooms (Once the water is cooked out of the mushrooms....add a 1/4 cup of the Cab) 32 oz of mushrooms Dump in the Crock! Sautee 1/2 zuchinni 1/2 squash Dump in the Crock! Seasoning Time 2 teaspoons red pepper flakes 2 teaspoons each of basil, oregeno, parsley 1/4 teaspoon of Cayenne Pepper 1.5 tablespoon of sugar 5 bayleafs 1 clove of chopped garlic 2 teaspoons of salt & 2 tablespoon of fresh ground pepper (Push It.... Push It Real Good) Dump in the Crock! Cooking Tips -The sauce must be cooked on low for at least 12 hours. If you do not give the sauce at least 12 hours of respect to come together....I Hate You! Patience is the key...TRUST ME! -Stir the sauce periodically. You may need to add additional liquid to keep the sauce filled to the top. My recommendations are: add a little water first, then wine (whatever wine you might have (white or red......because by this time i have already drank all the cab), chicken stock. -The acidity of the tomatoe may require additional sugar....go by taste. -The sauce deserves a GREAT Cheese....trust me and buy the block of good Parm that you cant believe you are paying $6.99+ for and grate it. -Prior to serving.....chop some fresh basil and sprinkle in the sauce.... -Serve with thick spaghetti pasta a la dente I describe this dish in two words.............. BAAAAAA MMMMMMM!!
