I love the holidays! Spent the evening baking... So far I have two dozen mini bourbon pecan pies, two pumpkin cheesecakes, and a scrumptious breakfast casserole of shortbread smothered in pecans, apples, and a bourbon laced praline sauce. Looking forward to that last one in the morning with some fresh whipped cream. Tomorrow Ill be cooking up a huge pot of our familys traditional Brunswick stew and getting a head start on the menu for Thursday--dressing, sweet potatoe souffle, cranberry salad, Wednesday I have to brine the turkeys and then Thursday should be mostly just cooking the dishes I have prepared in advance while Dad fries the turkeys. Then on Friday I have to make my coconut cheesecake balls and mix up the dough for a couple loaves of rosemary bread so they can rise overnight and bake in the morning. My brother is coming in on Thursday and then we have a family reunion on Saturday with all my aunts and cousins. Looking forward to an exciting week!
