I made Dads spaghetti gravy today. The meats: 1/2 lb ea. ground beef and Italian sausage well mixed. ( made into 1 meat balls ) 6 chicken thighs cubed, 1 stick pepperoni slices to 1/8 All meats browned pepperoni was sweat till just cupping. Throw the grease out. 2 celery hearts, one med onion 1 good hand full fresh chopped parsley. Did I mention 6 cloves garlic crushed. 2 small cans tomato paste. This all was on a slow and low simmer for 3 hrs. Naturally I had to adjust the gravy throughout the afternoon. This gravy is good on angel hair spaghetti, over a good crusty roll or just in a bowl. I do add more parmigiana cheese to taste. I may have to wash it down with a Bud. Enjoy. A.
