I made Tater Tot Taco Casserole last night and it was actually really good. The only thing that I did differently was I added more enchilada sauce. 4 more oz., didnt let it cool down since I had a very hungry boyfriend that was asking for over an hour when dinner was going to be done, I didnt measure the taco seasoning that(we have a large container of it), I couldnt find Mexican Style Corn so i had to make my own(I will add how I made mine) and I just added all the enchilada sauce to the bottom of my baking dish and spooned the enchilada sauce on top. I had medium enchilada sauce. It was Safeway brand. I have only seen Mild, Hot and Green sauce. The hot one is too hot when I had made enchiladas a couple months ago. Robynes Mexican Style Corn 1 bag Frozen Corn To your liking Paprika To your liking Chili Powder To your liking Pepper 1 tbsp Butter 1/2 tbsp Mayonnaise In a sauce pan, melt butter. When the butter is melted, add all the ingredients. Stir frequently. Cook for 7 minutes. If you have Parmesan cheese, you can add that.
