I made my first yogurt cheese and it is really good. I had some plain yogurt sitting in the fridge and a bit bored with it, so googled making homemade cheese. It is very easy. Line a strainer with two layers of cheesecloth. In a medium bowl, mix together 3 cups of plain yogurt, 1/2 tsp salt, 1/2 tsp pepper and 1 tablespoon of minced garlic. I also added 1 tablespoon dried dill. Pour into the cheesecloth lined strainer. Place the strainer over another bowl to catch the liquid, and refrigerate for 1 to 2 days, until all of the liquid has drained off. Empty the drainage bowl occasionally so you can see when the cheese has stopped draining. Transfer cheese to a covered container, and store in the refrigerator for up to two weeks. This is a nice cream-cheesy textured spread. I had it on Trader Joes Gluten Free Brown Rice Bread toasted well, with slices of persian cucumbers and thin slices of red onion... delicious.
